Vegan Quinoa Bean Snow Pea Salad With Pumpkin Seeds
|Plant-based dishes don’t have to be boring. There are so many varieties of veggies to liven up any dish. Give this Quinoa Black Bean with Snow Peas Salad a shot. My family loved it.

Why are so many people today jumping on the plant-based Vegan diet?
There are many reasons why, but it all boils down to what is right for you. Maybe it could be you just want to eat healthier, reduce your carbon footprint, or reduce animal cruelty, what ever it may be it is your decision.
This plant-based dish is high in protein which offers an array of foods and flavors which can be a satisfying alternative for even a meat and potato kinda guy.

Besides the reasons mentioned above, the overall health benefits of eating a plant-based diet may reduce the risk of cancer, heart disease, obesity, and other related issues.
Ingredients:
- 1 C Quinoa cooked to instructions
- 1 540 ml can Black Beans, drained and rinsed
- 1 small bag of Broccoli Slaw
- 2 medium carrots chopped
- 1 small bag of Snow Peas
- 6-7 cloves of Garlic chopped
- 1 small Red Onion chopped
- 2-3 Tbs Olive Oil
- Sea Salt and Pepper to taste
- 1/8 tsp Cayenne
- 1/2 tsp Lemon and Herb Spice
- 1/4 tsp Parsley
- Pumpkin Seeds
Directions:
To begin with, Cook Quinoa as per cooking instructions and set aside.
In Wok Pan add oil, garlic, and onion on medium/high heat. Toss in snow peas, chopped carrot and cover with a lid for about 2-3 min. Include Broccoli Slaw stirring frequently till all veggies are slightly softened. Finally, adding in Black Beans together with spices.
Lastly, mix in Quinoa and toss well. Let stand 5-10 min. This dish can be served cold or hot. Top off your dish with a Sprinkle of Pumpkin Seeds.
I admit I love my salt, in particular, Himalayan Sea Salt as it is known to be a healthier choice than table salt.

Is there a way to find out the nutrition facts on these recipes? Are all plant based meals low carb and low sugar and if so, how low. I am cooking for 2 insulin diabetics at home. I was also told protein is a diabetics best friend.
I do not have the nutritional facts although “good” carbs and protein is good for Diabetic. Plant-based meals tend to be high carb but are a healthy carb. Everything in moderation. Definitely tweak it to suit your families diet. Sweet potatoes are higher in starch and simple sugars. Use small amounts. Grains are also safe for Diabetics. Don’t quote me as I don’t cook as per Diabetic so that’s when Google is your best friend.:) Hope this was some help.
