Quinoa Sweet Potato Stir Fry with Greek Yogurt and Goat Cheese Dressing

Ingredients
  

  • 1 Sweet potato Chopped
  • 1 Cup Quinoa Cooked as per intructions
  • 1/2 Cup Red pepper
  • 1 Cup Avocado Chopped
  • 1 Small red onion Sliced or diced
  • 4 Cloves of Garlic
  • 1/4 Cup Olive oil
  • 3 Spinach Cubes or 1 C fresh
  • 1 Cup Chicken Broth Substitute Vegetable broth
  • Salt and pepper to taste

Dressing

  • 1 C Plain Greek Yogurt
  • 1 tbsp Olive Oil
  • !/4 C Goat Cheese crumbeled
  • 1 tbsp Lemon Juice
  • 1/8 tsp Cayenne pepper
  • Salt And pepper to taste

Instructions:

Pre-boil sweet potato to soften. Pre-cook quinoa as per instructions.

In a frying pan add olive oil, onion, garlic till opaque. Add remaining ingredients until cooked through.

Eat cold or hot

Dressing

In a blender add all ingredients. Blend well and toss the desired amount over the dish.
