Quick and Easy Omelet Muffins

These quick easy omelet muffins are great for people on the go or a quick snack at any time of day.

Ingredients:

  • 8-9 Eggs
  • Tsp Milk
  • 1/2 cup diced Red Pepper
  • 1 Cup chopped Spinach
  • Salt and Pepper to taste
  • 1 Cup shredded cheese of your choice

Instructions:

Preheat oven to 350 F. Spray the muffin tins with a cooking spray to prevent sticking.

Sprinkle even amounts of pepper and spinach into each tin. Add cheese.

In a mixing bowl add eggs and milk. Whisk to well blended. Pour over each equally.

Place a top cookie sheet. Bake for 20-25 min until golden and firm.

Serve or Freeze and pop into microwave to reheat. Approx 1 minute
