Orzo Topped With Salmon Dish
|This Orzo topped with Salmon dish is absolutely delicious. Orzo is one of my favorite kinds of pasta, especially for fish and seafood dishes. It is a nice alternative to rice with its light texture.
What is Orzo?
Orzo is a type of pasta that is shaped like grains of rice. It is made from wheat semolina flour, which is mixed with water and then rolled into small, rice-shaped pieces.
Orzo is commonly used in Mediterranean and Middle Eastern cuisine and can be used in a variety of dishes, including soups, salads, and casseroles. It is a versatile pasta that is often used as a substitute for rice and can be cooked in the same way as other types of pasta.
Ingredients:
- 1/2 a box of Barilla Orzo Pasta 454g
- 1-2 Salmon fillet steaks
- 1 small sliced Red Onion
- 4 Diced Garlic Cloves
- 1/4 Cup Sliced Green Olives or Capers
- 1 Tbsp of Chicken Broth Mix
- 2 cups fresh Spinach
- Lemon Pepper to taste
- 1/4 C Butter plus 1 tbsp
- 1 Tbsp Olive Oil
- 1 sm 1-quart pot
- 12″ T-Fal Fry Pan
Instructions:
Start cooking Orzo in a pot as per directions. Stir in the chicken broth mix. Usually cooks 7-10 min. Strain the remaining water. Add 1 Tbsp Butter.
In a large frypan, add 1/4 c butter with 1 tbsp olive oil. add salmon to one side and cook approx 4-5 min per side or until light pink. (Only flip once) Add onions, garlic, olives, and spinach to the other side cooking at the same time. Season with lemon pepper and an extra pinch of sea salt and black pepper to taste.
Serve over a bed of Orzo. Yummy!!! I like to have mine with Red Wine. (Copper Moon Smooth or Bodacious Smooth Red)
