This macaroni goulash is a healthier version to the Old Fashioned Goulash. Pre-cooking the macaroni prevents the dish from becoming a starchy mess.
Moose is so much leaner than beef. It has no carbohydrates, only 102 cals per 100 gram serving. It does not have that gamey taste that many wild types of meat have. High-quality protein and is rich in minerals, including selenium, iron, zinc and niacin.
Recipe
1 small onion or 1/2 a large one
4-5 garlic cloves, (chopped together with onion)
1 lb ground Moose.(may use beef)
1 tbs olive oil
1 can corn
1 796ml can of diced tomatoes
1/4 tsp dry mustard
1/4 tsp steak spice
1/8 tsp curry
3 cups uncooked macaroni
2 cups water (1/2 cup coconut milk with 1 cup water optional)
salt and pepper to taste
Directions:
Boil water to cook macaroni to Al dente.Strain. Fry ground moose until cooked. Add olive oil. Chop onion and garlic together with my favorite appliance and add to meat mixture. Drain corn and add to mixture. Add diced tomatoes with juices. Pour in 2 cups water, macaroni and spices. Stir well and simmer low for 30-45 min. Dish out and enjoy.
You may also add crushed roasted seaweed sheets or frozen spinach chunks for added nutrition.
