|Grandma always said, If you are sick you need to eat chicken soup. Who hasn’t heard those words? Stand the same with turkey. That doesn’t mean just go grab a pack of chicken noodle soup off the shelf and you are good to go. Not a chance, not all chicken/turkey soup is healthy. We all know that homemade soup is healthy but do you really know why?

- The Stock or Broth is a very important component to a healthy soup. The packaged dry stock just won’t cut it. How To Make The Healthiest Chicken Soup Ever Using Chinese Soup Mix
Ingredients
- A large pot of water. (I prefer to use only Kangen Water)
- Carcass most of what is left of a turkey/chicken dinner (neck, giblets, legs, wings, remaining body of the bird) Remove much of the fat and skin but it is good to leave a bit in for flavor and some health benefits.
- 1-2 cups of leftover turkey/chicken chopped
- Onion and garlic, I use 1/2 an onion and 1/2 a bulb of garlic minced up.
- 1″ chunk of Turmeric
- Salt, pepper to taste
- 1 tsp poultry seasoning
- 3 sticks of celery and carrots
- 1-2 frozen chunk Spinach
- Chinese soup mix (Rince well with warm water and set aside)
Directions:
Boil and simmer carcass for 4-5 hours with lid. Strain into another large pot. Put broth back on the stove and add Chinese soup mix. Simmer for an hour, strain again. Pick whatever you can off the bones and all of the Chinese mix can be added back into broth if preferred except for the Astragalus the flat wood like herb.
