Chicken Taco Cabbage Rolls
|Who doesn’t love cabbage rolls.?
We all know we must cut back on eating red meat. I like adding a spin on classic recipes.
Recipe:
- 1lb Ground chicken
- 2 mild Italian sausage(out of casing)
- 4 c Instant whole wheat rice
- 1 pkg of Taco seasoning
- 5 garlic cloves diced
- 1/2 onion diced ( I use a electric dicer for onion and garlic)
- 1 can crushed tomatoes
- 1 cup water
- 1/4 tsp oregano
- 1/4 tsp basil
- salt and pepper to taste
- 2 tsp olive oil
- 1 lg head of cabbage
In large pot boil cabbage until the leaves break apart from core.Take out as they pull away and set aside. In large fry pan add olive oil,1/2 the diced onion/garlic mix,add chicken and sausage till done.Add package of taco seasoning per directions.
Cook 4 cups of rice as per directions,add to meat mixture.
In sauce pan add the last half of garlic/onion mix to 1tsp olive oil,add 1 can crushed tomatoes,add 1 cup water, salt,pepper,basil and oregano.simmer.Add 1/2 cup sauce to meat mixture.
Roll mixture into cabbage leaves as desired to fit.Add to casserole or lg roaster. Add tomatoes mixture on top of rolls.May need to add 1 cup of water to roaster.
Bake at 350 for 1 hr. Top with plain Greek yogurt or sour cream. Enjoy!
